WINEMAKING
The Shiraz fruit for this wine was harvested on a cool autumn morning. The berries were gently pressed to minimise colour extraction from the grape skins. The must was inoculated with a proprietary yeast and fermented at a cool temperature to retain the natural fruit flavours. Upon completion of fermentation, the wine was lightly fined, filtered and bottled to preserve its bright fruit characters and aromas.
